black cherry tomatoes and vanilla cheesecake

There were just enough ripe tomatoes today to have in a cheese and tomato sarnie – mmm.

Later on, the offspring and I made vanilla cheesecake, mostly following the recipe here.

Here’s our modified ingredient list:

120g digestive biscuits, finely ground
60g melted unsalted butter
1 tablespoon brown sugar

450g cream cheese
3 large eggs
130g white sugar
½ cup coconut yoghurt
1 teaspoon vanilla extract

In the 16.5cm tin for 26 minutes on the steam program in the instant pot.

The taste test will be for elevenses tomorrow …
