seeded white #2

This was a ad libbed loaf: 2 cups mixed seeds soaked all day in 300g water added to 500g flour, 3tsp yeast, 8g salt and 200g water. I kneaded it and left it overnight in the fridge and baked it this morning: an hour or so at gas 6½.

This is the first time, I think, that the scoring has worked well – forming nice crunchy flaps.
