coconut yoghurt
I’ve made yoghurt from coconut milk; this is the second successful batch. I didn’t take photos the first time but remembered to take them this time.
The recipe I used calls for two tins of coconut milk – I found a make with just two ingredients: coconut and water. Whisk in 1½ tsp gelatine and heat it to scalding – 2 minutes in the microwave. Stir in 1½ Tbsp honey.

When it’s cooled again to around 40°C, whisk in two crushed probiotic tablets.
This is just the right amount to fill these little pots …

… which fit nicely into the instant pot where they sat for 12 hours on the yoghurt program.

Mmm; luckily the two-legged mice don’t like it!
